Texas Tater Casserole

1 lb ground beef

1 c. onion, chopped

½ c. celery, chopped

2 cloves garlic, chopped

2 cans (10 ¾ oz each) cheddar cheese soup

1 can Mexicorn (corn with peppers)

½ c. picante sauce (I used thick & chucky)

2 tsp chili powder

¼ tsp pepper

1 bag (16 oz) tater tots

½ c. taco cheese (cheese with taco spices)

Heat oven to 375degrees.  Cook beef, onion, celery, and garlic until beef is brown.  Drain.  

Stir all ingredients (except tots and taco cheese) into the beef mixture.  Spoon into a greased 13x9” pan (or two 9” pans).  Top with tater tots.  Bake uncovered 40 minutes.  Sprinkle with cheese.  Bake 5-10 minutes longer, or until bubbly and cheese in melted.  

If Frozen:  Thaw in fridge.  Spray aluminum foil with nonstick spray, and cover casserole.  Bake covered for 30 minutes at 375 degrees.  Uncover and bake 20 minutes longer.
