No Bake Raspberry Tarts

Kitchen Concoctions:

Prep Time: 15 minutes Serves: 15

15 mini phyllo shells

3 tablespoons graham cracker crumbs (about 1 1/2 cookie sheets)

1 tablespoon melted butter

1 tablespoon sugar

2 tablespoons honey

4 (ounces) cream cheese, softened

½ teaspoon vanilla

15 fresh raspberries

Combine crumbs, butter, and sugar in a small bowl. Spoon 1/2 teaspoon crumb mixture into the bottom of each phyllo shell.

Whisk together honey, cream cheese and vanilla in a small bowl. Spoon 1 teaspoon cream cheese mixture into each phyllo shell, topping the graham cracker mixture. Top each tart with 1 raspberry.

Sprinkle tops of tarts with remaining crumb mixture. Can be served immediately or refrigerated.
