Ingredients:

Firm Seitan , sliced 1/4 inch thick on the bias

flour or corn tortillas

avocado, lettuce, nondairy sour cream (optional)

Marinade:

4 garlic cloves

1 jalapeno

1/2 bunch cilantro

3  limes, juiced

1 orange, juiced

1 lemon, juiced

2 T olive oil

lime, halved

Chili Salsa:

3 tomatoes, quartered

4 dried chilies, soaking in warm water while seitan is marinading

1 garlic clove

Blend all of the marinade ingredients: garlic, jalapeno, cilantro, lime juice, orange juice, lemon juice and olive oil. Marinade the seitan slices at least 15 minutes.

Preheat your grill, oil the grates. Put your tomatoes and lime halves on the grill and grill them while you are grilling the seitan. Grill each seitan piece on both sides. While it is important to get a nice char on the outside of the seitan, it is important to not dry them out. Not good eats. A few minutes on each side should be sufficient. You may baste if you wish.

When the tomatoes are tender, blend the salsa ingredients. The salsa ingredients are the grilled tomatoes, the drained chillies, the garlic and the remainder of the marinade liquid. You want to pulse and to just combine well to leave it chunky or puree well to get it smooth. It is up to you.

To assemble, heat the tortilla on the grill, add seitan, sliced or chopped if you wish, topped with salsa and a squeeze of the grilled lime. You can also add avocado, nondairy sour cream or lettuce, if you wish.
