Red Velvet Cake with a (Healthy) Twist

Serves: 8
Ingredients:
~ 1 box Chocolate Box Cake Mix
~ 2 Large Eggs
~ 1 stick melted Butter
~ 1 ½ cups Pureed Beets
~ 1 Tbls Cocoa Powder
~ 1 Tbls Sugar
Preheat your oven to 350. In a large mixing bowl or stand mixer, combine puree, eggs, cocoa powder, and sugar. Add melted butter and cake mix. Place batter in a greased and floured cake sheet or split between greased and floured 9-in cake pans. Bake for 32-40 minutes, or until a toothpick comes out clean.
Frost with Cream Cheese Frosting of choice!
