Tiramisu
yield: 8-10 servings
Ingredients:
2 packages mascarpone cheese (227g/8oz each)
4 yolks
1/4 cup powdered sugar
3/4 cup heavy whipping cream
3 teaspoons instant coffee
300 ml/ 10 fl. oz boiling water
24 ladyfingers
3 tablespoons baileys or amaretto liqueur
2 teaspoons cocoa powder mix with grated chocolate
Directions:
Dissolve completely the instant coffee into the water and set aside to cool down.
Whisk the yolks and powdered sugar until fluffy and pale. Gradually add mascarpone and whisk until well incorporated. In a separate bowl whip the cream and fold it into mascarpone mixture. Mix well.
In a separate bowl, combine espresso and baileys or amaretto. Soak 1 ladyfinger at a time in the coffee mixture. In an 8 by 8-inch pan (20x20cm), arrange soaked ladyfingers close together in neat rows until the bottom of the pan is completely covered. Pour 1/2 of the mascarpone mousse over the ladyfingers and smooth with a spatula. Sprinkle 1/2 of the chocolate and cocoa powder over mousse.
Create another layer and chill until set.
