Rice Filled Cheese Log

1 pound Original Velveeta (room temperature)
1 (8 ounce) cream cheese
1 bunch green onions
1 (10 ounce) can Ro*Tel diced tomatoes and green chilies, undrained
½ cup cooked rice
diced jalapeno peppers, if desired
Roll Velveeta cheese out with rolling pin between 2 sheets of waxed paper or cling wrap. Remove top sheet. Combine cream cheese, green onions, Ro*Tel, rice and jalapeno peppers in a food processor. Spread cream cheese mixture on top of Velveeta down the center. Roll into a log.
Best when made 1 to 2 days ahead of time and refrigerated. Serve at room temperature with “Harvest Crisps 5 Grain Crackers” by Nabisco.
