Grilled Chicken and Goat Cheese Panini

Ingredients:

~ 8 oz, grilled chicken breast, sliced thinly

~ 4 oz, crumbled goat cheese (I used one rolled in parsley)

~ 5 Tbsp, Pesto

~ 1 whole, Roma tomato, thinnly sliced

~ ½ Onion, thinly sliced and sauteed until tender

~ 4 slices,  Artisan Rosemary Italian Loaf

Directions:

Prepare chicken over hot grill until just done. Slice thinly and set aside.

Prepare other ingredients, slicing tomato, crumbling goat cheese, slicing bread and sauteeing onion over hot non-stick pan.

Heat panini press, or heat cast iron skillet and cast iron panini press over seperate heating elements at a medium heat.

Spray skillet and panini press with non-stick cooking spray.  Assemble paninis with pesto, chicken, cheese, tomato, and onion in between slices. Place on skillet and lay panini press over the top of the sandwich. Let toast for approximately 4 minutes. Flip if necessary and to achieve “grill” marks from panini press on both sides of sandwich.

When thoroughly toasted, remove from heat, slice and serve.
