Salmon Burgers

yield: 4 burgers

Ingredients:

about 1lb/450g salmon fillet - cut into small pieces

¼ cup breadcrumbs

1 tablespoon chives - chopped

2 tablespoons cilantro - chopped

2 tablespoons jalapeno pepper - chopped

2 tablespoons lime juice

½ teaspoon salt

¼ teaspoon black pepper

oil to cook

Directions:

Place the salmon in a food processor; pulse until coarsely chopped. Add breadcrumbs, chives, cilantro, pepper, lime juice, salt and black pepper and mix very well. Divide salmon mixture into 4 equal portions, shaping each into a 3/4-inch-thick patty.

Heat the oil in a skillet over the medium heat. Add salmon burgers and cook about 2 minutes on each side or until done.

Serve with french fries, baked or cooked potatoes, salad or with the hamburger buns. Add some lemon wedges when serving.
