Polish Style Chicken Soup
yield: 6-8 people
Ingredients:
2lb/900g chicken meat (legs, wings, drumsticks, breasts, etc.)
5-6 carrots - about 400g/14oz
1 large parsnip - about 100g/3.5oz
1 large onion - about 200g/7oz
8 cups cold water
3 tablespoons vegeta
3-4 tablespoons chopped parsley
salt and black pepper to taste
Directions:
Wash the meat and put in a large pot. Peel and cut the carrots (into a large pieces), parsnip and onion (leave them in one piece). Put them into the pot as well. Add water, vegeta, cover the pan and bring the soup to boil.
Then reduce the heat, uncover, skim foam and simmer for about 20-30 minutes or until the vegetables and the meat are soft.
Remove and discard parsnip and onion. Remove also meat and set aside to cool then remove meat from bones, discard bones, chopped the meat and put back to the soup. Add parsley, salt and pepper.
Serve with thin egg noodles.
