Żurek - Sour Rye Soup

yield: 6-8 people

Ingredients:

5 medium carrots - peeled and sliced

1 large parsnip - peeled and leave in one piece

1 onion - peeled and leave in one piece

4 large potatoes - peeled and cubed

250g/8.8oz polish sausage - cubed

½ jar of the base for żur/soup (about 250g/8.8oz)*

8 cups water

2-3 tablespoons of vegeta

salt and black pepper to taste

1 tablespoon marjoram

Directions:

Add the carrots, potatoes, parsnip, onion and polish sausage into a large pan. Add the water and vegeta, cover and bring to boil. Then reduce the heat, uncover, skim foam and simmer for about 10-15 minutes or until the vegetables are soft.

Remove and discard parsnip and onion. Add the soup base, mix well and bring to boil. Add the salt and pepper if needed and 1 tablespoon of marjoram.

Serve.
