London Bars

Crust:

½ c. butter, softened

1 c. flour

½ brown sugar

Topping:

2 eggs

3 Tbsp flour

1 c. brown sugar

½ tsp salt

1 ½ c. shredded coconut

1 c. chopped pecans

1 tsp vanilla

Heat oven to 375 degrees. Mix butter, ½ c. sugar and 1 c. flour until crumbly. Press into greased square 9x9 pan. Bake 10 minutes.

In medium bowl, beat eggs. Add 3 Tbsp flour, 1 c. sugar and salt, mix well. Add coconut, pecans and vanilla. Drop by spoonfuls and spread over crust. Bake 20-30 minutes - watch because they burn easy. Cut into bars.
