Moist Molasses Gingerbread
makes one 9x5inch cake
Ingredients:
1 ¼ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground ginger
¼ teaspoon ground cinnamon
¼ teaspoon gingerbread spice mix
1 egg - lightly beaten
½ cup milk
5 tablespoons butter
heaped ½ cup molasses
Directions:
Sift the flour, soda, baking powder, cinnamon, ginger and gingerbread spice mix into a large bowl. Stir in the sugar and combined egg and milk. Combine butter and molasses in a saucepan. Stir constantly over heat without boiling until butter is melted; stir hot mixture into flour mixture. Mix well.
Grease a 23x13cm (9x5inch) loaf pan. Pour the mixture into prepared pan, bake for about 30 minutes* at 180C (355F). Leave the cake in the pan for a while before turning onto a wire rack to cool. Slice and serve:)

*originally the recipe said it should be baked for about 50 minutes but my cake after 50 minutes was burned and black so please check your cake during the baking:)
