Frizzled Brussels Sprouts
Adapted from: Anne Burrell’s Cook Like a Rock Star Cookbook
4 slices bacon, cut into strips
2 lbs. Brussels Sprouts, leaves separated
Handful chopped walnuts
Pinch red pepper
Salt to taste
Step 1:
Cook the bacon in a large saute pan over medium heat until crisp. Remove from pan using a slotted spoon and set aside on a paper towel lined plate.
Step 2:
Drop the Brussels sprout leaves into the bacon grease (you can drain some off it it looks like too much for you). This is where you will hear the frizzle! Cook for 7-8 minutes, stirring occasionally. It’s alright to let the leaves brown.
Step 3:
Add in walnuts, red pepper, and salt. Let cook for 2-3 minutes. Stir in reserved bacon and serve.
