1 small box Rice Chex
2 C coconut (optional: toasted)
1 C sliced almonds (optional: toasted)
1 C karo syrup
1 C sugar
1 1/2 C butter
1/2 t. baking soda
1 t. vanilla
Add sugar, karo syrup, salt and butter in a microwavable bowl and microwave for 5 minutes. Stir and cook 2 more minutes (watch out – it’s HOT). Using hot pads, remove from microwave and add vanilla and baking soda. Stir until combined.
Meanwhile, if choosing to toast coconut and almonds, do so. Add Rice Chex, coconut, and sliced almonds into a large mixing bowl and mix together.
Pour sugar mixture over the dry ingredients and stir gently to combine.
