Pan Seared Scallops with Herb Butter

(2 servings)

8 Scallops

Flour for Dusting

Salt and Pepper to taste

Oil for frying

2 tbsp Butter

1 clove minced Garlic

¼ tsp dried (or fresh) Thyme

¼ tsp dried (or fresh) Rosemary

Preheat oven to 350 degrees. Pat scallops dry with paper towel. Season with salt and pepper. Heat a nonstick skillet over high heat with oil. Dust scallops with flour on one side and shake off excess flour. Cook scallops for 3 minutes on side with flour (to form crust) and don’t move.  Transfer the skillet to the oven and cook for 5 minutes. Meanwhile, melt the better and combine with garlic, thyme and rosemary. To serve the scallops, place 4 scallops on each plate and drizzle with Herb Butter.
