
Roasted Garlic Focaccia
1 Bread Machine Pizza Crust* or your favorite pizza dough recipe
*1/3 cup of chopped, fresh basil and oregano
3 medium-sized heads of garlic (or 4-5 small ones, or 1-2 large ones)
Olive oil
Cornmeal (optional) for baking pan
Sea salt
Black pepper
- Add bread machine pizza crust ingredients to bread machine.
- Add chopped fresh basil and oregano to bread machine.
- Start bread machine on dough setting.
- (Alternatively, prepare your favorite recipe with herbs added.)
- Gather heads of garlic and slice in half, crosswise. (You should have a top and bottom, not two sides. You should be able to see a cross-section of all the cloves inside.)
- Place garlic on a large piece of foil, cut sides up.
- Drizzle garlic with olive oil.
- Wrap foil around the garlic and seal to create a packet.
- Roast garlic packet in a 375º oven for 30-40 minutes (until cloves are soft and mashable).
- Remove garlic packet from oven, open and allow to cool slightly.
- When cool, squeeze garlic cloves from the papery skins into a small bowl.
- Drizzle a little olive oil over the garlic cloves and mash with a fork.
- Set aside.
- Prepare desired baking sheet by spreading with a thin layer of oil, then sprinkling with cornmeal. (I used a 16x12” rimmed cookie sheet.)
- When focaccia dough is ready, gently stretch to fit your baking sheet.
- Once stretched, place on baking sheet and poke all over with fingers to make indentations. (These will make little pockets for the toppings.)
- Spread mashed roasted garlic evenly over the surface of the dough.
- Sprinkle with sea salt and black pepper to taste.
- Bake at 425º for 15-20 minutes, until edges are golden brown.
- Allow to cool slightly, cut into pieces, and enjoy!
