Zesty Zucchini Relish

12 cups chopped zucchini

4 cups chopped onion

2 red bell peppers, chopped

1 green bell pepper, chopped

Mix together in large glass or stainless steel bowl. Add...

1/3 cup canning and pickling salt

Cover the bowl and let sit in cool (70-75 degrees) place for 12 hours or overnight.

After 12 hours, transfer mixture to a colander and drain... rinse and drain again, using hands to squeeze out excess water.

In a large saucepan add zucchini mixture

2-1/2 cups granulated sugar

2-1/2 cups white vinegar

1 Tbsp. ground nutmeg

1 Tbsp. ground turmeric

4 Tbsp. prepared horseradish

1 chili pepper, chopped, with seeds

Bring mixture to a boil, reduce heat and boil gently until liquid is reduced and mixture is the consistency of thin commercial relish (about 45 minutes).

Add hot mixture to hot jars and process in a boiling water bath for 15 minutes.
