Chicken Broccoli Rice Casserole

1 bag                frozen broccoli, cauliflower, carrot mix

¼ c.                butter

1 can                cream of chicken soup

¼ c.                milk

1 c.                velveeta cheese

1 tbsp                mayonaise

2-5                 chicken breast

1 c.                uncooked rice

salt and pepper to taste

onion flakes to taste

Boil veggie mix until tender, save the water to use in casserole if it is too dry.

Mix everything in a greased 9x13 pan.  Bake covered for 45 minutes-1 hour at 350 degrees.

If frozen:  Leave the uncooked rice out of the dish.  Thaw casserole completely.  Add in uncooked rice.  Bake at 350 degrees for 45 minutes-1 hour.  If you notice the casserole is dry and sticky, add some hot water and continue baking.
