Ingredients

- 2 cans black beans, rinsed and drained

- 2 cups frozen corn, defrosted

- 1 can diced tomatoes

- 1 onion, diced

 Non-stick cooking spray

- 1 tsp. garlic powder

- 1 tsp. chili powder

- 1/8 tsp. cayenne pepper

- 2 tsp. cumin

- Salt and pepper to taste

Recipe – 4 servings

- Spray a large soup pot with non-stick spray and put over medium heat

- Add onions and sauté until soft

- Add spices and cook 1-2 minutes

- Add black beans and tomatoes, bringing to a boil

- Remove 1 cup of black bean mixture and puree in a blender or food processor

- Add it back into the pot with the corn

- Bring it back to a boil and let simmer on low until ready to serve!
