Roasted Garlic & Poblano Hummus
2 heads of garlic
1-2 poblano peppers
2 15oz. Cans Chickpeas/Garbanzo beans
2/3 cup Tahini paste
1/3 cup lemon juice
1/4 cup olive oil(plus a lil extra to drizzle on garlic)
1/2 cup chicken broth
Salt to season
Preheat Oven to 375 degrees.
Slice tops of garlic bulbs, drizzle with olive oil, add a few pinches of salt. Wrap in foil. Close tightly and roast in oven for 30-45 minutes(until garlic is soft) Squeeze out softened garlic once cooled.
Over an open flame char poblanos on both sides. Remove and place in plastic wrap or a ziploc (steam makes it easier to get rid of the char.) Roughly Chop.
In a food processor, pulse all ingredients together until smooth. Season with salt!
Baked Pita Chips
Pita bread
oilve oil
blend of salt, cayenne pepper, and garlic powder
Cut pita into triangles. Place on cookie sheet drizzle with olive oil, and sprinkle with seasoning. Bake for about 8-10 minutes or until golden in a preheated oven at 375 degrees.
