Green Garlic Dip

6 Ounces (1/2 Package) Extra-Firm Silken Tofu

1/2 Cup Frozen Chopped Garlic Scapes, Thawed

1 Cup Fresh Spinach, Packed

1/2 Cup Vegan Mayonnaise

2 Tablespoons Fresh Lemon Juice

2 Teaspoons White Miso Paste

Salt and Pepper, to Taste

Simply toss everything into your food processor or blender, and blitz until perfectly smooth. Pause to scrape down the sides of the bowl as needed, to ensure that everything gets incorporated. Season to taste, and chill thoroughly before serving.

Makes About 1 Cup
