Fast Gingerbread Cake

makes two 9x5inch cakes

Ingredients:

1 cup honey

1 cup sugar

1 cup milk

3 cups all-purpose flour

4 eggs (separate yolks and whites)

6 tablespoons butter

3-4 tablespoons gingerbread spice mix

1 heaped tablespoon baking soda

1 tablespoon caramel (put 2 tablespoons sugar in a skillet and heat until you get a dark brow confection)

1 tablespoon unsweetened cocoa powder

1 teaspoon ground cinnamon

nuts, raisins, dry plums, candied orange peel or anything else you like ( I added only walnuts)

plums butter to fill the cake (optional)

Directions:

Sift the flour and baking powder and set aside.

Place the honey, butter, gingerbread spice mix, cinnamon and caramel into a saucepan and bring to boil. Cool completely. Then add the sugar, milk, cocoa powder, yolks and flour with baking soda mixing very well after each ingredient.

In a separate bowl whisk the egg whites until stiff. Add to the batter and mix well. Then add nuts or raisins or anything else you decided to use, mix and pour the batter into two 9x5inch (23x13cm) pans.

Bake in a preheated oven 170C (340F) for about 50-60 minutes.

Cool, slice and serve.

You can also cut the cake and fill with the plums butter.

You can also make a ganache and spread over the top of the cakes.
