Buttermilk Cake with Plums
makes one 9x13inch/23x32cm cake
Ingredients:
Cake:
1 cup buttermilk - at room temperature!
3 eggs - at room temperature!
¾ cup sugar
2 ½ cups all-purpose flour
½ cup oil
2 ½ teaspoons baking powder
1 vanilla sugar (8g/32oz) or 1 teaspoon vanilla extract
about 600g/1.3lb Italian prunes - halved and fruit stones removed
Topping:
1 cup all-purpose flour
½ cup sugar
1 stick butter (113g/4oz) - softened
Directions:
Put all ingredients for a cake in one big bowl and mix well with a wooden spoon or whisker. Pour the batter into greased 9x13inch/23x32cm baking pan. Top with the plums (cut side up).
Place all ingredients for topping in a small bowl and using your fingertips rub the butter into the flour and sugar until well combined. Spread over the cake.
Bake the cake in a preheated oven 350F/175C for about 35-45 minutes - until the toothpick comes out clean.
Cool down, cut into squares and serve.

Note: You can use other fruits e.g. strawberries, apples, pears, etc. but never more than about 600g/1.3lb and if you use frozen fruit, defrost them first, otherwise the cake won’t turn out good:)
