White Chocolate Chip Cappuccino Muffins

Yields 12 muffins

  1. Preheat the oven to 375 degrees F. Line a 12-cup standard muffin tin with paper liners; set aside.
  2. In a large bowl, combine the flour and sugar.
  3. In a large glass measuring cup or another bowl, whisk together the milk, egg and espresso powder.
  4. Pour mixture over dry ingredients and add the butter. Stir using a rubber spatula just until moist.
  5. Add the white chocolate chips and gently toss to combine.
  6. Scoop the batter evenly into the muffin tray. Sprinkle with remaining white chocolate chips.
  7. Place into oven and bake for 18 minutes, or until a tester inserted in the center comes out clean.
  8. Remove from oven and cool on a wire rack.
