Double Chocolate Cake - adapted from Dining on a Dime
Here’s what you need:
2 cups flour
1 cup sugar
1 ½ teas baking powder
1 ½ teas baking soda
4 TBSP cocoa
1 cup cold water
1 cup mayo
2 tsp vanilla
In a mixing bowl, combine the dry ingredients. In a separate bowl, mix the water and mayo together. Stir in the vanilla. Add to the dry ingredients and mix well. The batter will be thick.
Spread in a greased 13x9 pan. Bake at 350 degrees for 25-30 minutes, or until a knife inserted into the center comes out clean. Remove from the oven and poke holes in the cake with a fork.
Now prepare the frosting. Melt 1 stick of butter in a saucepan. Stir in 1 cup sugar, ¼ cup cocoa, and ¼ cup milk. Bring to a boil, then boil for one minute. Pour over the cake and spread to cover.
