US Senate Bean Soup

Ingredients:

1 ½ cups dry navy beans or other small white bean, soaked overnight

10 cups water

1/2 teaspoon toasted sesame oil

1 teaspoon smoked paprika

1 large onion, minced

2 medium potatoes, peeled and small diced

3 celery ribs, minced

4 garlic, minced

¼ teaspoon pepper

1-2 teaspoons salt, or to taste

2 links vegan sausage, minced

4 T minced parsley

½ teaspoon liquid smoke

After soaking the beans in water overnight, drain and put them in a large pot. Add the water, toasted sesame oil and smoke paprika to the pot. Bring the beans to a boil and reduce to simmer. Simmer for 1 ½ hours or until the beans are tender.

After the beans are tender add the cooked sausage, onion, potatoes, celery, garlic, pepper and salt.

Simmer for another 20 minutes, or until the potatoes are tender. To finish the soup, mash it with a potato masher until it is as creamy as you like and stir in the liquid smoke and the parsley.
