Hearty Apple Cinnamon Waffles

Dry Ingredients:

1 cup millet flour

1/2 cup potato starch

1/4 cup tapioca flour

1/4 cup flax seeds

2 tsp. baking powder

1/2 tsp. salt

1 tsp. cinnamon

1/4 cup chopped walnuts

Wet Ingredients:

1/4 cup apple sauce

1 egg

1 medium sweet potato, baked and pureed

1 medium apple, grated or chopped in a food processor

1 1/2 cups unsweetened almond milk


  1. Mix all of the dry ingredients together.
  2. In a separate bowl, whisk the wet ingredients together. Pour into the dry ingredients and mix completely.
  3. Spoon evenly onto waffle iron and cook, in batches, according to the iron's instructions.
