Nacho Burgers

Salsa:
3 tbsp. red wine vinegar
1 tbsp. vegetable oil
1 chipotle chili in adobo, seeded and minced
3 tomatoes, finely diced
2 tbsp. onion, finely diced
3 tbsp. chopped cilantro
Salt
Cheese Sauce:
1 tbsp. butter
1 tbsp. flour
¾ cup milk
2 cups shredded Monterey Jack cheese
2 tbsp. grated parmesan cheese
Salt and pepper
Burgers:
1 ½ lbs. ground beef
Salt and pepper
Hamburger buns, split and toasted
Sliced pickled jalapenos and tortilla chips for topping
Step 1:
For the salsa, combine all the ingredients in a bowl and season with salt.
Step 2:
To make the cheese sauce, in a small saucepan melt the butter. Stir in the flour and cook over medium heat for 1 minute. Whisk in the milk and whisk until smooth and thickened (about 5 minutes). Add the cheese and whisk until smooth. Season with salt and pepper. Let the sauce cool until very thick and spreadable.
Step 3:
To make the burgers, form the ground beef into patties and season with salt and pepper. Cook on a grill or grill pan over medium heat until desired done-ness. About 5 minutes per side for medium-well burgers. Place the burgers in a bun, top with cheese sauce, salsa, pickled jalapenos and tortilla chips.
