Ingredients:

Tender Seitan, cutlets

oil for frying

Breading (optional)

cashew milk (1 c water blended with ¼ c cashews)

1 c breadcrumbs

1 c flour

1 t paprika

½ t salt

½ t pepper

Garlic Hot Sauce:

1 c hot sauce

½ c vegan butter

¼ c garlic, minced

Tear the seitan cutlets into strips. (I did not do this the first time and have since updated the method.)

Now you have the option of frying them as is or breading them.

If you will be breading them have a shallow pan ready with the cashew milk and one with the flour, breadcrumbs, paprika, salt and pepper mixed in.

Dredge the seitan pieces in the flour/breadcrumb mixture, then in the milk and back into the flour/breadcrumb mixture. Allow the pieces to sit for about 15 minutes to allow the breading to stick. Fry them until golden and crispy.

To make the Garlic Hot sauce, heat the hot sauce, vegan butter and garlic in a small saucepan. Cook on medium for a few minutes.

Toss the fried seitan pieces in the sauce of your choice: Garlic Hot Sauce, Hot Sauce (omit the garlic), a BBQ sauce or just eat as is.
