Waffle Recipe

2 1/2 cups all purpose flour
2 tbsp baking powder
1/2 tsp salt
4 egg yolks
2 1/2 cups milk
1 cup cooking oil
4 egg whites

Combine dry ingredients in a medium bowl. In another bowl beat yolks slightly, beat in milk and oil. Combine flour mixture and egg mixture all at once, stir until just combined. It will still be slightly lumpy.

In a small bowl beat the egg whites until stiff peaks are formed. Gently fold the whites into the batter leaving a few fluffs of egg white. DO NOT OVERMIX. Nothing worse than tough waffles.

Pour about a cup of batter into a heated, greased waffle iron, follow the manufacturers directions for cooking waffles.

For Cinnamon Waffles add 1 tsp of ground cinnamon to the mixture.
