Apple Pie Sticks
1 tablespoon vegan margarine
3 cups apples, peeled, cored, and diced
¼ cup brown sugar
½ teaspoon cinnamon
5 vegan egg roll wrappers
1 tablespoon sugar
¼ teaspoon cinnamon
Vegetable oil for frying
In a medium size skillet, melt margarine, then add apples, brown sugar, and 1/2 tsp. cinnamon. Cook over medium-high heat, stirring often until apples are tender.
Pour into a bowl and place in the refrigerator to cool, about 30 minutes.
Place approximately 2 rounded tablespoons of apple filling into corner of each egg roll wrapper, roll up, making sure to tuck corners in. Wet edges of wrapper with water, then seal the edges. Repeat with remaining ingredients.
Mix sugar and 1/4 tsp. cinnamon in small bowl, set aside.
Heat oil to 350 degrees, then add egg rolls two at a time, turning to cook all sides. Remove and place on paper towel-lined plate. Sprinkle with cinnamon sugar. Repeat with remaining egg rolls.
Be sure to use hot pad mitts and long-handled tongs
when cooking the apple pie sticks in the hot oil.
