Black Bean Quesadillas
8 whole wheat tortillas
1 cup canned black beans
¼ cup mild salsa
¼ cup Tofutti Better than Cream Cheese
¼ cup green chiles
Place the black beans and salsa in a blender or a food processor. Blend until smooth.
Place 1 1/2 teaspoons of Tofutti Better than Cream Cheese on each of the eight tortillas. Spread evenly to cover the entire tortilla.
Top four of the tortillas with ¼ cup of blended black beans and then one tablespoon of green chiles. Place the other whole-wheat tortilla with the Better than Cream Cheese side down on top of the beans. Grill over medium-high heat on a nonstick skillet on both sides. Cut each quesadilla into four pieces and place on a large platter.
