HDO Process

Prep
- OAs will arrive at the client site at a designated time (dependent on client). They may or may not start at Lish prior to this (depending on role of OA).
- OAs will begin setting up the food line (chafers, utensils, tables, etc.). OAs may also prep for future shifts, if time allows (cleaning utensils, organizing storage, etc.) For IPM orders minimal prep is required prior to the food arriving.
Handoff
- Chef will arrive at the client at designated time (dependent on client). This may be a loading dock, loading zone, parking garage, etc.
- OAs should be ready to meet chef partners 5-10 minutes prior to chef arrival time. If OAs are not present chefs will call OAs. If the chef arrives early Lish staff should meet them ASAP.
- Lish staff will verify that all food is present using their packing sheet. They will alert both Delivery Support and the chef if an item is missing or low quantity.
- Transportation of food
- For family style: Transfer food to delivery bags. Transport delivery bag to service area.
- For IPMs: food stays in the chef equipment. Chefs will help transport meal to service area but are not expected to help with setup
Setup
- OAs will set out 50% of each component of the meal (% subject to change/client requirements). Some items, such as dietary restrictions or cold items, can be completely set up. Rest of food kept in delivery bags to keep temp.
- OA open line for client at a designated time (dependent on client)
