Egg Salad Sandwiches

(Serves 3 students)

6 hard-boiled eggs

1/3-cup mayonnaise

1 teaspoon prepared yellow mustard

1 dash paprika

1 green onion

6 slices bread  

Directions

  1. Place egg in a small pot and cover with cold water.
  2. Place pot of eggs on the stove on high heat (keep lid one pot to boil quickly)
  3. Bring water to a boil (bubbling) and immediately remove from heat once boiling.
  4. Cover the pot with the lid and let eggs sit in hot water for 10 to 12 minutes.
  5. Remove eggs from hot water safely by picking out of the pot with ladle and place in a bowl to cool
  6. Dump hot water down the sink (Be careful of steam)
  7. Once cool peel the shell off and then chop the eggs with a large knife into tiny pieces.
  8. Place the chopped eggs in a bowl, and stir in the mayonnaise, mustard, paprika and chopped green onion.
  9. Season with salt, pepper and paprika and spread on bread!
