Turkish culinary tradition is rich in variety and has been influenced by both Mediterranean and Middle Eastern cuisines. Like other Mediterranean cuisines, the food is flavored with olive oil, herbs, and spices, but dishes are rarely spicy. A lot of healthy vegetables are used and meat is slow-cooked in the oven to allow the flavors of the spices, herbs, and food to come through. Turkish food is flavorful and satisfying.
Hospitality is a big part of Turkish culture, and food is often enjoyed with friends and family. Time and care is taken in preparing the food, and it is made with love. This principle is also upheld at Hagia Sofia; we use only fresh ingredients and prepare everything by hand, from our homemade lavash bread.
In addition to carefully selected meals, our list is complemented by Turkish drinks, such as the traditional Turkish yogurt drink ayran to balance the spicy flavors, long-brewed Turkish tea and strong Turkish coffee brewed in a copper pot to end the tasting tour, Turkish wines, Raki liquor flavored with anise, and the well-known Efes beer.

“Mezeler”
Turkish appetizers are known as meze, which can be cold or warm. Traditionally, meze are placed in the center of the table for everyone to enjoy and choose from. In Turkey, various delicious dips, sauces and purees are served with the appetizers. Mezes are often enjoyed with Turkish lavash bread to get an authentic taste of the Mediterranean. All starters include oven-fresh lavash bread.
