Makes 8-10
1 cup rolled oats
1 cup buttermilk
1 egg
½ cup brown sugar
½ cup oil
1 cup all purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon orange rind, grated fine
1/2 cup chopped walnuts
Preheat oven to 350℉.
Pour buttermilk over rolled oats into a small bowl, and set aside.
In another bowl, whisk together egg, brown sugar and oil.
Add the flour, baking powder, baking soda, salt, orange rind and walnuts. Add oatmeal mixture and stir all until just blended.
Spoon into muffin cups lined with paper cups
Bake for 20 minutes or until the toothpick comes out clean.
