Carrot Ginger Soup with Chickpea Spinach Pancakes

Tangy purée of carrot ginger soup served with a savory chickpea flour crêpe laced with sautéed spinach.  Antioxidant ginger in the soup works alongside chickpea flour; which is rich in folate, iron, fiber, protein, and many other beneficial nutrients.  Add a touch of spinach to the crêpe and you have a full slate of vitamins and minerals that complement each other like peas and carrots!

Gruyère Turkey Burgers with Roasted Zucchini and Crispy Potatoes

Melty Gruyère cheese covered turkey burgers served with thyme zucchini coins and crispy potatoes.  We love ground white and dark meat turkey because it’s rich in B vitamins, selenium, zinc, and phosphorus.  These vitamins and nutrients may support various aspects of health, including muscle growth and maintenance.  Kid approved and parents love real veggies on the plate.

Soy Ginger “Negimaki” Chicken

Health favorite salmon is seared and served with a fiber rich mix of roasted fennel, yellow beets, parsley, and orange segments.  Fennel is rich in Vitamin C, folate, and aids in digestion and reduces inflammation.  Beets, parsley, and oranges bring a kaleidoscope of benefits too with folate, Vitamin C, iron, and Vitamin K.  With powerhouse quinoa on the side.

French Farmhouse Shallot Dijon Pork Chops  

Cast iron seared pork chops served with a Dijon mustard shallot sauce (mais oui!). Served with sautéed Swiss chard and slices of pan seared apples. Swiss chard is high in Vitamins K, C, A, E and is rich in many minerals.  Apples bring a touch of tart sweetness and fiber.
