Concessions Operations Guide

This guide covers various tasks required while working concessions. It is a long document. Concessions is not a difficult job to do but there are things to be learned at first. Please reach out to other members for help while learning.

Turning on the menu board on the TV:

1.  Use only the “MENU ONLY” remote

2.  Hit the power button

3.  Scroll to the right and down and select “Roku Media Player”

4.  Select the Hockey menu

5.  When finished for the day, using the “MENU ONLY” remote turn it off and place remote back on the cash register.

NOTE: DO NOT USE THE “TV ONLY” remote, that one belongs to the other TV and cannot be used on the Concessions TV. If used it will mess up the concession’s menu programming.

Downtime between customers:

Check freezer and refrigerator to see what needs to be filled

·      Portion Cups:

o   Frosting is located in the cabinet by the popcorn, if there isn’t any in that tray next to the popcorn, check the back supply room. If none mark it on the order sheet on the freezer.

o   BBQ sauce, Ketchup, Ranch all located in the fridge. If opening a new BBQ sauce or Ranch please make a spout cut out in the cover. It makes it easier to pour vs removing the entire cover and having it spill everywhere when trying to fill cups.

o   Pizza Sauce—jars are located in the back supply room. You must label the Pizza sauce cups with a date when they were filled…only these need to be labeled with a date 

·       Frozen Items:

·       Must wear gloves when directly handling food

o   Cheese Curds—5 oz

o   French Fries—6 oz

o   Chicken Tenders—3 pieces, if bag has a mix of small and large pieces, please try and mix them up when pairing them together

o   Corn dogs—5 pieces

o   Hot Dogs…check refrigerator, if needed pull some hotdogs from the freezer, there is always an opened bag in the concession’s freezer, remove at least 6 hotdogs and place in a clean Ziplock bag and label it with the date you put them in the bag for the refrigerator with a sharpie marker. 

·      Drinks

o   All opened trays are kept in concessions under the front counter, please move all beverages forward and refill from the back 

·      Hot Chocolate Machine

o   Open the front door of the machine, gently tap/rock the containers back and forth to get the powder to settle. Only refill if half empty or less. Please do not open a package if it won’t fit, if you open it, it has to all go in the container, nothing is to be left opened in the cabinet. All powders are in the cabinet below machine.

·      Slushie

o   Pre-made mix is in the refrigerator

o   Fill each flavor to the raised fill line that is about an inch from the top, do not over fill or it will spill over during the night time hours.

o   Depending on the shift and the flow of customers, you will need to gauge on when to fill it during your shift. Especially weekends when we tend to have concessions open for a longer period of time, the more you keep it filled up the quicker it makes ice….example…if you let it drop below around 3 inches, it will take longer to make slush, if you fill it when it’s around 1 to 2 inches in drop, it will take less time to make slush, be smart and thoughtful in working with the slush machine.

o   Please refrain from scooping out of the top of the machine, again if you follow the guidelines above for filling you will not have to scoop out of the top. Customers will understand if they need to wait to order if you need to fill a machine.

o   If containers need filled:

§  Add 2 gallons of HOT to WARM water to the container to the fill line of 2 gallons

§  Add 2 packets of mix

§  Cap and shake

§  Please do not use cold water, it will not dissolve correctly 

·      Changing the Nacho Cheese bag

o   Remove the bag on top of the plate that is being warmed to be used next

o   Find a clean cheese nozzle under the counter in one of the crates

o   Remove the bag, pop off the round plastic cover and screw the new nozzle on

o   Do not reuse the current nozzle

o   Take the current used nozzle, rinse with hot water, then take a slushie cup and fill with hot water and place the nozzle in the cup of water and leave it sit behind the sinks on the counter, let it sit for a day or so and someone on another shift will take care of cleaning it all. It has to sit in hot water so it can soak to get the cheese out of the all the small creases, then it will get washed with soap and water to finish.

·      Nonfood items

o   Cups, Cup Lids, Paper Towels, Plates, Food Trays, Napkins, Straws

§  These items can be filled during your shift

 Food Prep Instruction

·        Fried Food

o   Instructions are on the wall near the deep fryer, please follow them

·        Hotdogs

o   Take from the refrigerator

o   Place in food tray

o   Microwave for 1 minute

o   Microwave bun for 15 seconds

·        Pretzels

o   Microwave for 1 minute

o   For Toppings Remove from microwave spray liberally with water then add toppings

o   All sauces and cheese are free with the pretzel

o   If customer wants additional cheese or frosting it’s an additional 50 cents

·        Nachos

o   Bags of chips are in cabinet below popcorn

o   Set bag in a large tray

o   Include 1 portion cup of cheese with lid

·        Breadsticks

o   Microwave 30 seconds per breadstick

o   Place in pizza oven for 3 to 4 minutes

§  Keep a close eye on them, they can burn fast

·        Oatmeal Cups

o   Follow instructions on the cup

·        Popcorn

o   Turn on all 3 buttons on the top in the machine

§  In the Kettle add

·         1 silver cup of kernels

·         ½ cup oil----please use a 1 cup measuring cup and fill to ½ cup line

·         1 blue scoop of popcorn salt

Once Popping slows down to almost nothing then turn the kettle motor off and the kettle heater off and dump the kettle pot. Dump it hard to get all the popcorn out, you will not break it, if you don’t dump it hard, you will burn the remaining kernels in there and it will build up over time making it harder to clean.

·        Ramen Noodles

o   DO NOT REMOVE THE ENITIRE COVER, YOU WILL NEED TO ONLY PULL BACK HALF WAY

o   Using the tea kettle to fill, fill to the max line and return cover

o   If no water in tea kettle, use the glass measuring cup and fill with 1 cup of water and microwave for 2 ½ minutes and then fill the cup and return the cover

o   Please do not microwave the Ramen Noodle cup

·        Mac and Cheese

o   Follow the directions on the package

·        Hot Pockets

o   Place in microwave sleeve and inside a food tray and cook for 2 minutes and 30 seconds

·        Coffee

o   Remove the coffee grounds pot, add a filter, dump one packet of grounds in the pot, replace pot in the slide.

o   Using the pitcher located next to the coffee machine, fill it with water and dump in the pocket in the top

o   PLEASE MAKE SURE THERE IS A POT UNDER IT AS IT WILL START MAKING AUTOMATICALLY

o   If it doesn’t make a full pot, dump it and remake a new one, there is a revisor on the inside of the machine and water tends to evaporate over time, sometimes it won’t make a full pot, you will need to start over again.

o   Remove grounds when done with one batch of coffee, do not leave the grounds in and add more

Closing Concessions

·         Turn the deep fryer off

·         Make sure the pizza oven is unplugged

·         Make sure the tea kettle is empty and unplugged

·         Fill all sinks accordingly

o   2nd sink…water and dish soap

o   3rd sink…hot water

o   4th sink…warm water and one cap full of sanitizer

o   Wash all equipment and place in drying rack

·         Wash dishes

o   All utensils used

o   Hot Chocolate Tray

o   Slushie Tray

o   Fryer Pan

Popcorn machine

·         Do not use soap and water, just use a damp rag and wipe down the inside

·         The platform inside the popcorn machine will come out and you can clean the underside of it

·         Remove the collection tray underneath and dump it and wash that with soap and water

 

Wipe down all counter tops in concessions using the sanitizer and paper towels

Wipe down all the tables in the lobby using sanitizer and paper towels

Sweep the lobby

Sweep Concessions

Remove all trash from concessions and take the dumpster

·         There are 2 dumpsters outside…the first one is for cardboard only, the second one is for all trash

Close out the register and return all cash to the cash box and lock

Log out of the square account

Turn all lights off and lock all doors to concessions and the back supply room

Money Bags

When you open concessions, count your start up cash, make sure there is $150 in the start up bag. If there is not, please make a note on your envelope when you close out that you were short and state the amount.

If you need to break bigger bills, please use the “Change bag” located in the cash box, it’s a big brown bag with a lock zipper on it, please make sure that if you take cash out you put that amount back into that bag…do an even swap.

At the end of your shift make sure you have $150 back in the start-up bag using as many smaller bills as you can, if you have to put bigger bills back into the start-up bag, please reference to the change bag and break those down to $5’s and 10’s, please do not put $20’s and larger bills into the start up bag. The remaining amount should match what is on your print out slip, put that and the cash made into an envelope, seal it and fill out the front. Place that envelope in the 3rd bag in the box so our treasurer can pick it up for deposit.

 When do I close the till out???

The cash drawer must be closed out between a game and public skate. We like to keep the public skate drawer separate from the game drawer. All games before public skate can be ran together, all games after public skate can be ran together. If operating a school skate event, please keep that separate from games and public skate.

  Extra Notes:

·        Please do not open a bag of Cheese Curds, French Fries, Chicken Tenders or Corn Dogs and take just a few out. Once you open it, please make up bags of items and place in freezer, if there isn’t enough to finish the bag, please just close it up the best you can and leave in the concession’s freezer. Do not put any opened bag of frozen food in the back freezer.

·        Always use a new zip lock bag for hotdogs, please do not continue to reuse the bag that you just emptied.

·        If you open a new bag of hotdogs from the back freezer, please put the remaining bag inside a zip lock bag.

·        Please do your part and help restock concessions, be it the refrigerator, the freezer, the slush machine, the cupboards. Your help is needed

·        Absolutely no eating in concessions, please remove yourself to the lobby and eat, when done and re-entering concessions please wash hands, dry and sanitize. If you wish to not follow the rule after being given a warning, it will become a board decision on what to do.

·        Only adults and anyone 16 and older with an adult supervision is allowed in concessions, anyone not wishing to follow the rules will be asked to leave. If you continue to not follow the rule after given a warning it will become a board decision on what to do.
