Gluten-Free Apple Cinnamon Cake

½ cup butter, melted

2 eggs

⅓ cup organic cane sugar

⅓ cup maple syrup

1 cup of gluten-free flours (I used rice flour, coconut flour, and oat flour)

½ teaspoon baking soda

½ teaspoon salt

1 - 2 teaspoons cinnamon

2 cups chopped apples

Combine melted butter, sugar, maple syrup, and 2 eggs.  Add the dry ingredients.  Stir together and fold in the apple pieces.  Spread in a greased shallow baking dish.  I used an 8 x 12.   Bake in a preheated oven at 350 degrees for 30 - 35 minutes

For a light glaze - melt 2 Tablespoons butter, 2 Tablespoons maple syrup, and ½ cup powdered sugar.
