RECIPE TITLE: Sara’s Apple Cake

CAKE INGREDIENTS:

1 ¼ c. cooking oil

2 c. sugar

2 eggs, well beaten

3 c. (360 g) A-P flour

1 tsp. salt

1 tsp. baking soda

1 c. pecans, chopped

3 c. apples, peeled and chopped

2 tsp. Vanilla

FROSTING INGREDIENTS:

½ c. butter

1 c. light brown sugar

¼ - ½ c. cream or evaporated milk

DIRECTIONS:

Cake Directions

Combine oil, sugar and eggs in a large mixing bowl.

Sift flour, salt and soda together.

Add flour mixture to eggs and sugar mix.

Fold in apples, nuts and vanilla.

Bake in 11x15 pan, jelly roll pan, 2 (9 inch) layer pans, or bundt/tube pan at 325 degrees for 45 - 55 minutes.

FROSTING DIRECTIONS:

Mix all ingredients.

Cook to soft ball stage.

Pour over warm cake. (Optional: poke holes in cake prior to icing.)

Note: Cake is best when 2 or 3 days old.
