Barrell Seagrass Rye Whiskey, muddled lemon wedges and mint leaves, with a touch of sugar and a drop of Fee Bros Peach bitters.

Notes:

Barrell Seagrass is a blend of Canadian and American Rye whiskey finished in select Apricot Brandy, Martinique Rum, and Madeira Wine casks. This is a fruity and perfumed whiskey, laden with tropical fruit, melon, and sun dried apricot. Bright and spicy rye accentuates the notes of elderflower, cinnamon, and grapefruit zest. Fresh fruit and tannins on the end leave the palate clean and awaiting another sip.

Balcones Texas Single Malt Rum Cask Finish is an American made 100% single malt whiskey secondary aged in ex-Balcones Rum casks. The nose is full of macerated fruits, caramel, and baking spices, with a hint of smokey mesquite and citrus peel. On the palate is an explosion of flavor;  spicy gingerbread, chocolate, dark stone fruit, orange, and spiced rum and with coffee and mint notes hiding in the periphery.

Notes:

Angel’s Envy Rum Barrel Finished Rye Whiskey is a standout rye coming from Louisville, Kentucky. Barrel finishing whiskies is a relatively new trend but the folks at Angel’s Envy are already masters. This rye spends six years in a medium-char new american oak barrel before spending another 18 months in ex-Plantation Rum barrels that previously housed Maison Ferrand cognac. The result is an amazing blend of sweet and spicy. Maple syrup, caramel, and rye spice are predominant on the nose. The palate is no different; sweet maple and cognac are followed by allspice, walnuts, and toasted grain.

Despite the age, the nose is quite fresh with just cut apples and oranges. Dark leather, maple syrup, and crushed nuts take over on the palate with wood spices and dried fruit following closely behind. This whisky stays with you for the long haul.

Hibiki 17yr., Osaka Japan, 43 abv                                                                                                             120  

On the nose; honey, brown sugar, caramel, juicy pear and flowers. The taste is surprising and complex. Somehow light and rich, very warm with herbal notes, cocoa, and hazelnut. There is also an earthy, salty character, like a blue cheese or a Highland single malt. A bit of water brings out some chocolate. Finish is exceptionally warm and soothing.

Old Forester Birthday Bourbon 2020, Kentucky Bourbon, 49 abv                                      110    

Along with a healthy dose of oak, breakfast foods come to mind like oatmeal with brown sugar and apples; maple syrup and pancakes; and bacon and buttered toast. There's even a touch of cherry fruit here. As you taste, warm barrel spices come through which marries well with the aforementioned sweet notes. A nice bittersweet and savory finish is found with a bit of char smoke wrapping it all up.

Bright rum notes swirl with lush vanilla, giving way to delicate tropical notes including underripe bananas, freshly picked lemon and molasses. Rich rye spice with a full-bodied mouthfeel imparts vanilla buttercream, butterscotch, and toffee, interlaced with dry oak, sugary spices and fruit notes from the ex-Pacific Rum casks.

Blanton’s Gold, Kentucky, 56.5 abv                                                                             52    

Right off the bat you get big oak, pencil shavings, tobacco, resin and sawdust. The nose develops into orchard fruits such as cherries. Vanilla, milk chocolate, honey, dried fruits and loads of pepper swirl in the mouth. Dry rye grass spices up the finish where these spices take forever to sizzle away.

High West “A Midwinter Night’s Dram”, Utah Rye, 49.3 abv                                                      60  

The robust spicy rye notes are still present in the glass, but as it sits, red fruit tempers that just a bit. As you taste, the spicy rye comes again to the forefront along with vanilla and more red fruit. The finish is warm and spice filled with hints of chocolate and fresh whipped cream with a dash of white pepper.

Woodford Reserve Very Fine Rare Bourbon, Kentucky, 45.2 abv                                       43     

 There's a decent amount of char smoke on the nose, but it's coupled with significant amounts of cherry fruit and baking spices. And since there's also a bit of a buttery pastry thing happening, that is likely to bring cherry pie to your thoughts. On the palate the bourbon is fairly tangy with a medium body and a nice alcohol bite. The finish is pleasant and of moderate length with more of the cherry flavor shining through.

Jameson 18yr. ‘Bow Street’, Ireland, 55.1 abv                                                33

Rich wood and hot ethanol make a quick introduction before letting huge sweet salted caramel notes take over. Toffee, vanilla, leather, oak, and subtle sherry notes sing for days and baking spices linger pleasantly.

Heavy dried fruit and strong cherry notes hide behind warm peat smoke. Dried orange, toasted almonds, and tannins help balance sweet and smoke on the palate.

As you taste, rye spice comes through as well as a moderate oaky flavor, but the bourbon isn't too chewy or tannic. You can still find those fruit and sweet notes too. A bit of leather shows up as well. The finish is lengthy with a tangy, bittersweet profile as well as a touch of green vegetal notes.

You’ll find maple sugar, butterscotch, nutmeg, and red hots. Dried fruits and caramel continue through a long finish.

Spicy up front, with a bit of a savory and herbaceous qualities alongside the vanilla and charred oak.  A few drops of water open it up to reveal sweeter notes of apple and cardamom; it finishes dry but with a subtle fruit note.

This is a lusciously rich dram landing sweetly on the palette with notes of toffee, pear, almond, and a bit of salt with a gentle floral finish.

NEW Barrel Seagrass Gray Label 16yr                                                 38

Mildly earthy sweet apricot accompanied by ethanol. Immediately warming musty oak, peach, and apricot; though more subdued and less bright than the standard Seagrass release, the balance is spot on. Rye spice and oak take center stage, with sweet peach cobbler and lemon zest.  

Suntory Yamazaki 18yr.,  Japan, 43 abv                                                                                               70   

 There is a rich and milky feel to the whisky. The flavors found here sound like they would make a fabulous dessert: dates, figs, honey, walnuts, and cinnamon. The finish is dry with those tastes pleasantly remaining on your palate.

Glenmorangie Signet, Highland Scotch, 46 abv                                        34

Powdered sugar, vanilla, coconut and raspberry sponge cake, lightly toasted marshmallow, ginseng, and oaky tannins. Toasted pecans, cloves, soft white pepper, slightly burnt toffee, and malty chocolate finish off.

Nikka Gold and Gold Samurai, Japan, 40 abv                                                                                 50  

 The nose is sweet. Aromas of vanilla, toffee, and sweet spice are evident. A drop of water brings soft, brown sugar. Buttery cinnamon biscuits, Christmas cake and rich malt add to the smooth, warm palate. Hints of ginger emerge, as the medium finish continues delivering the sweet spices evident throughout.

Jack Daniel’s Coy Hill, Tennessee, 70.25 abv                                                70

A rocket of red-hots laced ethanol escapes from this dram upon pouring. There is no doubt this juice is sporting over 70% alcohol content! Given time to rest; toasted nuts and sweet cherries tinged with maple toffee and rich leather.

Macallan 18yr., Speyside Scotch, 43 abv                                                                                           49

Sweet, dry sherry, salted butter on a toasted english muffin. Clean and uncomplicated, yet full and satisfying.

Red Spot, Cork County, Ireland, 46 abv                                                        50

Vanilla, caramel, orange, pineapple, gentle vanilla, creamy custard, and even a touch of watermelon. Rich and grainy, full, and weighty on the palate, although the finish is rather short, with flecks of cinnamon and clove.

Weller Full Proof  Bourbon, Kentucky , 114 proof                                                                     70

Having a nose of vanilla, dark cherries and caramel. On the palate, there is a balance of caramel and toasted oak. The finish is long, with notes of crème brûlée and chocolate.

Sullivans Cove Single Cask, Tasmania, 48 abv                                                                         55    

 A pretty high vanilla character all the way through, with Asian pear and Gala apples reigning throughout the first sip. The character develops with Tellicherry black peppercorns with the whisky finishing on the slightly smoky side..

Whistlepig 18yr. Double Malt, Canadian Rye, 46 abv                                                                  55

The nose brings together an interesting mix of lemon and tomato leaf. The palate is light with vanilla and bread notes up front. Some pepper notes perk up right near the finish.

NEW Pendleton Directors’ Reserve, Canadian Whiskey, 40 abv                        34

Warm buttery bread, hints of vanilla, coconut, and caramel drift around in a sea of soft brown butter toffee, pecan, and finally oaky molasses.

Scents of honey, bananas, pears and golden apple waft from the glass along with some faint phenol notes. These sweet and fruity aromas are repeated on the palate with a taste similar to Honey Nut Cheerios cereal sprinkled with cinnamon and clove. Some lemon oil tartness and slight bitterness come out in the finish.

291 Colorado Single Barrel Bourbon, Kentucky, 50 abv

A surprising fruity note strikes first on the nose, with pears and baked apples, followed by cocoa powder, vanilla bean, and baking spices. The palate is quite rich as it begins, shifting to tannic wood, with cinnamon, vanilla, spearmint, and dark chocolate. An extended finish offers char, molasses, and allspice.
