Our head mixologist, Cory Teubner, has created these cocktails in order to feature and enhance the inherent flavor and aroma of these finely crafted spirits.

CANADIAN FLIP *                20

Alberta Premium Cask Strength Rye, maple syrup, whole egg, cream, nutmeg dusting

Alberta distillers might not be a household name in the whiskey world, but it should be! Like the Canadian version of MGP (Midwest Grain Products), Alberta distillers provide its spirits to many other distilleries and bottling operations, including big brands like Jefferson’s, Masterson’s, and Whistlepig. Ringing in at 64% abv., this rye makes an excellent backbone to a classic but nearly forgotten cocktail: The Flip - a precursor to modern eggnog, once served in a stein with beer, and heated with a red-hot cast iron poker from the fire. Equal parts fruity, spicy, and sweet, this whiskey has everything it needs to hold its own in this creamy, decadent, yet simple cocktail. Hot beer not included.

An homage to an excellent cocktail, the Brightwood Old Fashioned, that was previously part of a mini-cocktail flight at the Westward Distillery tasting room. The earthy notes inherent in both rooibos and Westward Single Malt Whiskey meld together perfectly, and a touch of vanilla and honey let the sweet barley malt shine through. If you've yet to try Westward whiskey, this is a great way to enjoy one of the very best whiskies the Pacific Northwest has to offer.

Balcones Single Malt was one of the first whiskies I fell in love with: spicy, sweet, smokey, nutty, citrusy, with a hint of dark chocolate. It’s just as palatable on a hot summer’s day as a frosty mid-winter’s eve. This cocktail leans into the wintery end of its flavor profile; baking spices, pecan pie, and candied orange. What better way to spend an evening than curled up by the fire, with a loved one, and an excellent old fashioned?

Despite the age, the nose is quite fresh with just cut apples and oranges. Dark leather, maple syrup, and crushed nuts take over on the palate with wood spices and dried fruit following closely behind. This whisky stays with you for the long haul.

Hibiki 17yr., Osaka Japan, 43 abv                                                                                                             120  

On the nose; honey, brown sugar, caramel, juicy pear and flowers. The taste is surprising and complex. Somehow light and rich, very warm with herbal notes, cocoa, and hazelnut. There is also an earthy, salty character, like a blue cheese or a Highland single malt. A bit of water brings out some chocolate. Finish is exceptionally warm and soothing.

Redbreast 27yr., Cork Ireland, 54.6                                                        110

It opens with chestnut, vanilla, and a hint of cinnamon; it feels deceptively light at first, but then the port finish comes through with an unmistakably fruity, jammy note reminiscent of red currants. This is a spicy, high-proof expression, and a few drops of water can help open it up.

Along with a healthy dose of oak, breakfast foods come to mind like oatmeal with brown sugar and apples; maple syrup and pancakes; and bacon and buttered toast. There's even a touch of cherry fruit here. As you taste, warm barrel spices come through which marries well with the aforementioned sweet notes. A nice bittersweet and savory finish is found with a bit of char smoke wrapping it all up.

The robust spicy rye notes are still present in the glass, but as it sits, red fruit tempers that just a bit. As you taste, the spicy rye comes again to the forefront along with vanilla and more red fruit. The finish is warm and spice filled with hints of chocolate and fresh whipped cream with a dash of white pepper.

Spicy notes of rye, leather, mulling spices, molasses, and sweet crème brûlée play incredibly well together.

Heavy dried fruit and strong cherry notes hide behind warm peat smoke. Dried orange, toasted almonds, and tannins help balance sweet and smoke on the palate.

Bright rum notes swirl with lush vanilla, giving way to delicate tropical notes including underripe bananas, freshly picked lemon and molasses. Rich rye spice with a full-bodied mouthfeel imparts vanilla buttercream, butterscotch, and toffee, interlaced with dry oak, sugary spices and fruit notes from the ex-Pacific Rum casks.

Vermont rye whiskey aged in ex-fig brandy casks and Greek scratch tentura barrels creates a complex, slightly sweet and herbaceous whiskey with notes of cinnamon, cloves, and toffee. Powerful layers of citrus, fig jam, and gingerbread.

Apple sauce, brown butter, maple sweetness, black tea with lemon, and spicy clove finish. Commandments is Canadian rye whiskey finished in two types of unusual barrels. The first contained an unorthodox spirit that WhistlePig distilled from rye and whey and infused with aromatic resins from Boswellia and Commiphora trees. After being finished in American new oak and those resin barrels, The Boss Hog X was matured in craft mead casks.

This is the foundation of the Octomore expression. Aged entirely in first-fill ex-bourbon barrels. Creosote, green wood, toasted barley, honey, cinnamon, campfire smoke, touch of dark stone fruit.

This takes the same malt from 14.1 and matures it in second-fill Amarone casks, Oloroso hogsheads, and some first-fill Amarone casks. Hot motor oil, heavily toasted cereal grains, red currants, baking spices, and hot coffee.

This iteration changes the mashbill with Concerto barley grown on Islay itself. It is matured in first-fill ex-bourbon barrels and second-fill ex-European oak casks. Earthy smoke, sweet mash, toffee, biscuits, smoldering peat.

Crown Royal 18yr., Canadian Rye, 40.0 abv                                                20

Thin wisps of spun sugar and vanilla on the nose beget a palate of the same; light and mellow vanilla, sugar, and oak. So velvety smooth that you’ll wonder if they forgot the alcohol.

 Vanilla, orange peel, and chocolate all loaded up with warm baking spices.

This is a lusciously rich dram landing sweetly on the palette with notes of toffee, pear, almond, and a bit of salt with a gentle floral finish.

Michter's Single Barrel Straight Rye 10yr, Kentucky, 46.4 abv                        50

Oakey vanilla custard, cinnamon, orange zest and mint on the nose. The palate is similar with added fennel, brown sugar sweetness, and a peppery long finish.

Barrell Seagrass Gray Label 16yr                                                 38

Mildly earthy sweet apricot accompanied by ethanol. Immediately warming musty oak, peach, and apricot; though more subdued and less bright than the standard Seagrass release, the balance is spot on. Rye spice and oak take center stage, with sweet peach cobbler and lemon zest.

Like biting into a peanut butter and jelly sandwich, this whiskey greets the nose with loads of grape jam and toasted nuts. It follows with ripe cherries, gingersnap spices, vanilla, maple and tannic woody notes that give superb layers of sweet, spicy, and dry as the dram evolves.

 There is a rich and milky feel to the whisky. The flavors found here sound like they would make a fabulous dessert: dates, figs, honey, walnuts, and cinnamon. The finish is dry with those tastes pleasantly remaining on your palate.

Glenmorangie Signet, Highland Scotch, 46 abv                                        34

Powdered sugar, vanilla, coconut and raspberry sponge cake, lightly toasted marshmallow, ginseng, and oaky tannins. Toasted pecans, cloves, soft white pepper, slightly burnt toffee, and malty chocolate finish off.

Blanton’s Straight from the Barrel, Kentucky Bourbon, 63 abv                        35

Raisins and orange zest are first to present, then brandied cherries, peach, campfire in the distance, baking spice. Bold, rich, and fiery.

Blanton’s Gold, Kentucky Bourbon, 51 abv                                                52

Right off the bat you get big oak, pencil shavings, tobacco, resin and sawdust. The nose develops into orchard fruits such as cherries. Vanilla, milk chocolate, honey, dried fruits and loads of pepper swirl in the mouth. Dry rye grass spices up the finish where these spices take forever to sizzle away.

Nikka Gold and Gold Samurai, Japan, 40 abv                                                                                 50  

 The nose is sweet. Aromas of vanilla, toffee, and sweet spice are evident. A drop of water brings soft, brown sugar.
