Passover Mandelbread

This recipe is a stalwart of my wife’s family’s Passover tradition. It also happens to be one of the best Pesadik desserts I’ve ever had, with friends always asking us for the recipe when we serve it or bring it elsewhere. While we may not be able to have meals with friends this year, we share it with you here instead.

Makes 2-3 loaves

Ingredients

Preparation 

  1. Preheat oven to 350.

2. Cream sugar with margarine or butter. Add eggs.

3. Sift together cake meal, salt, and potato starch. Add to the creamed mixture.

4. Add chocolate chips and walnuts if you are using them. Mix. Dough will be sticky.

5. Shape into 2 or 3 loaves on a greased cookie sheet or sheets. Sprinkle top with cinnamon and sugar.

6. Bake for 45 minutes. Bake on a middle or upper rack to avoid burning the bottom.

7. Remove from oven and let cool slightly. Slice while still warm. Freezes well.
