Description:: We are looking for a passionate and motivated individual to build and drive the wine team in the Strathearn restaurant. With a dining room and cellar refurbishment scheduled for 2019, this is an incredible opportunity to join our F&B management team.

People Management

•        Train and develop team members to continually deliver a high quality product.

•        Communicate necessary information to all of the team.

•        Carry out interviews, as required to maintain budgeted staffing levels.

•        Review the team members’ performance to maximise their contribution to the hotel.


•        Continually look at ways of increasing the quality of service to enhance guest satisfaction.

•        Set and maintain standards to deliver a consistent quality product.

•        Support the operational team to enable them to successfully contribute to the agreed departmental objectives.

•        Assist the Restaurant Manager in planning ahead for special events eg festive periods.

•        Provide a friendly and efficient service ensuring a high standard of hospitality.

•        Upsell at every opportunity to maximise profitability.

•        Deal with any problems which may arise to minimise guest complaints.

•        Relay any guest comments to senior management where appropriate.

•        Ensure maintenance of equipment stocks for operational use.

•        Liaise with Cellars on best products available on the market.


•        Assist in the preparation of yearly business plans (beverage in particular).

•        Keep up to date with ongoing financial results.

•        Ensure that all of the team is competent and aware of how to securely close all payment transactions.

•        Attend team meetings so as to be kept fully aware of events within the hotel.

•        Control costs and labour charges to meet budgeted targets.

•        Be aware of industry trends and how these may impact the business.

•        Know and understand evacuation procedures to ensure guest safety.

•        Working knowledge and understanding of Health and Safety standards.
