About the Orchard

Two orchards: Ditcheat hill (deep, light loam or clay in patches, south facing, steep slope, old trees) and our home orchard on Limeburn Hill, Chew Magna (shallow sloping south, red clay and heavy loam; very old orchard (>300 years) but mostly replanted 20-25 years ago)

Vintage Conditions & Harvest

Sugar levels about typical, well ripened fruit. Early gales in October blew down fruit before it would have usually dropped. Generally cool weather during harvest meant that fruit stored well inside for an average of four weeks before pressing. Most of these varieties were on their 'on year'.

Makers Aims/Intentions

A two-orchard-blend of distinctly Somerset character, with many varieties used to give a broad and balanced palette. Blended for high acid and medium tannin, and aged to produce well integrated and mature tannin and associated aromas. As a bone dry cider it needs the structure of the tannin to give body, and it works very well with food, especially salty snacks or cheese

Tasting Notes

Main Taste Characteristics

Aromas of the orchard floor, leather, slight spice from tannin age, stone fruit, ripe apple. Palette has steel-y minerality, almost slightly salty, with soft tannins,  and  notes of tropical fruit.  Acid is bright and fresh with a hint of a green gooseberry acidity
