Recipe Cheater Korean Beef

2 lb. ground beef (I use 85/15) or ground turkey or ground chicken

1 med. onion, diced

2 T. oil (olive, vegetable, coconut, your choice)

½ c. low sodium soy sauce

½ c. palm sugar or brown sugar

1 T. sesame oil

1-2 T. fresh grated ginger

 ground garlic, to taste (~1 t.)

2-4 T. sriracha, to taste

2 c. rice (white or brown, your choice), cooked according to package directions

2-3 carrots, grated

½ head cabbage shredded or cabbage leaves

edamame  or mukemami

  1. Heat cooking oil to medium, and cook onions until beginning to turn translucent.
  2. Add ground beef and cook until browned. Remove excess grease.
  3. While meat is cooking, mix soy sauce, sugar, sesame oil, ginger, garlic, and sriracha.
  4. Pour sauce over drained meat and cook until sauce is warmed, 2-3 minutes.
  5. Serve with rice, carrots, cabbage, and edamame. We like to serve these as cabbage wraps with the rice, meat, carrots, and edamame wrapped inside. Alternatively, serve as a bowl, with rice as the base topped with meat and veggies.
