
Decadent Chocolate Mousse
A chocoholic’s dream. So rich that even a small portion will send you over the top. I suggest whipping some parve whipped topping (or whipped cream, if you’re making it dairy) and layering it or serving it on the side.

Makes 10 portions
Ingredients
- 9 large eggs, separated
- 2 cups sugar, divided
- 6 oz. margarine or butter, diced
- ½ cup water
- 16 oz. dark chocolate
Preparation
- Whisk egg yolks, 1 cup sugar, butter or margarine and water over a double boiler. Whisk until thermometer reads 160 degrees.
- Add chocolate and whisk until smooth. Remove from heat.
- Beat egg whites until they form soft peaks. Gradually add 1 cup sugar and beat until stiff but not dry.
- Fold ⅓ of egg white mixture into chocolate mixture and mix. Fold in remaining whites.
- Chill before serving.
