Decadent Chocolate Mousse

A chocoholic’s dream. So rich that even a small portion will send you over the top. I suggest whipping some parve whipped topping (or whipped cream, if you’re making it dairy) and layering it or serving it on the side.

Makes 10 portions

Ingredients

Preparation 

  1. Whisk egg yolks, 1 cup sugar, butter or margarine and water over a double boiler. Whisk until thermometer reads 160 degrees.
  2. Add chocolate and whisk until smooth. Remove from heat.
  3. Beat egg whites until they form soft peaks. Gradually add 1 cup sugar and beat until stiff but not dry.
  4. Fold ⅓ of egg white mixture into chocolate mixture and mix. Fold in remaining whites.
  5. Chill before serving.
