Pinatuyo na Adobong Baboy (Dry / Sauceless Pork Adobo)

Ingredients
- 1 bulb of garlic, slightly crushed
- 1 kilo of pork belly, cut into cubes
- 1 cup white vinegar
- 1 cup Sprite or 7-up
- 1/2 cup dark soy sauce
- 1 teaspoon black peppercorns
- 3 to 4 pieces of bay leaves
- 2 tablespoons cooking oil
Instructions
- In a medium size cooking pan or pot, pre-heat the cooking oil and sauté the crushed garlic until it turns slightly brown.
- Add pork cubes and sauté for a few minutes or until the meat has browned.
- Add peppercorns, bay leaves, soy sauce and vinegar. Cover and simmer for 30 - 45 minutes. Stir occasionally.
- Once the liquid subsides in half, add Sprite or 7-up. The goal is to make the sauce taste sweet, salty and sour.
- Simmer for another 15 minutes. Again, stir occasionally.
- Stir one more time so that the reduced sauce covers the meat.
- Turn off the burner and let it sit for about 5 minutes before transferring to a bowl so the sauce is absorbed in the meat.
Tip
Best served with warm rice.
