Pinatuyo na Adobong Baboy (Dry / Sauceless Pork Adobo)

  1. In a medium size cooking pan or pot, pre-heat the cooking oil and sauté the crushed garlic until it turns slightly brown.
  2. Add pork cubes and sauté for a few minutes or until the meat has browned.
  3. Add peppercorns, bay leaves, soy sauce and vinegar.  Cover and simmer for 30 - 45 minutes. Stir occasionally.
  4. Once the liquid subsides in half, add Sprite or 7-up.  The goal is to make the sauce taste sweet, salty and sour.
  5. Simmer for another 15 minutes.  Again, stir occasionally.
  6. Stir one more time so that the reduced sauce covers the meat.
  7. Turn off the burner and let it sit for about 5 minutes before transferring to a bowl so the sauce is absorbed in the meat.

Tip

Best served with warm rice.
