No Dud Spud Cakes

These spuds in pancake form are super easy to make - you’ll never end up with a dud!

Steps:

  1. Put first 4 ingredients into bowl. Beat with whisk until mixture is bubbly on top.
  2. Add potatoes. Sprinkle flour over top. Stir until potatoes are coated.
  3. Heat cooking oil in frying pan on medium for 3 minutes.
  4. Spoon potato mixture into 4 mounds on frying pan. Flatten each mound with back of spoon. Try not to let cakes touch each other.
  5. Cook for 3 -4 minutes until bottoms are golden. Use lifter to check. Turn cakes over. Cook for another 3-4 minutes until cakes are golden on both sides.
  6. Serve cakes with ketchup for dipping.

Makes 4 spud cakes - enough for you to share with a friend.
