No Dud Spud Cakes
These spuds in pancake form are super easy to make - you’ll never end up with a dud!

Equipment:
- measuring spoons - dry measures - small bowl - whisk
- large frying pan - spoon - spatula / lifter
Ingredients:
- 1 large egg
- ¼ tsp seasoned salt
- dash of pepper
- dash of garlic powder
- 1 cup frozen shredded hashbrowns
- 1 tbsp all-purpose flour
- 1 tsp cooking oil
- ketchup (or other dip like sour cream, salsa, etc)
Steps:
- Put first 4 ingredients into bowl. Beat with whisk until mixture is bubbly on top.
- Add potatoes. Sprinkle flour over top. Stir until potatoes are coated.
- Heat cooking oil in frying pan on medium for 3 minutes.
- Spoon potato mixture into 4 mounds on frying pan. Flatten each mound with back of spoon. Try not to let cakes touch each other.
- Cook for 3 -4 minutes until bottoms are golden. Use lifter to check. Turn cakes over. Cook for another 3-4 minutes until cakes are golden on both sides.
- Serve cakes with ketchup for dipping.
Makes 4 spud cakes - enough for you to share with a friend.
