Fish Tacos with Mango Pineapple Salsa

  1. In a medium bowl, combine the Greek yogurt, chili sauce, lime juice and a pinch of salt. Set aside.
  2. Prep your grill for high heat.
  3. In a small bowl, combine the ½ teaspoon Kosher salt, garlic powder, paprika, parsley.
  4. Pat the fish dry and rub both sides of the fish with the spice mixture.
  5. Thoroughly coat the grill grates with nonstick cooking spray.
  6. Place the fish on the grill for 3-4 minutes on each side– depending on how thick the filets are, until the fish is cooked through and flakes off with a fork.
  7. We put a little olive oil in a nonstick skillet, on medium heat and “toasted” the tortillas (one at a time) until they were lightly browned on both sides.
  8. Assemble your tacos using the Greek yogurt mixture, fish and mango pineapple salsa.
