Fish Tacos with Mango Pineapple Salsa
Ingredients:
- 3-4 tablespoons of plain Greek yogurt
- 2-3 teaspoons of garlic Chili Sauce
- ½ tablespoon lime juice
- Pinch of kosher salt
- 1 pound lean white fish filets – we went with Cod
- ½ teaspoon kosher salt
- ½ teaspoon of garlic powder
- ½ teaspoon of paprika
- ¼ cup of fresh parsley leaves (chopped)
- 6-8 flour tortillas
- * store- bought mango pineapple salsa*
Instructions:
- In a medium bowl, combine the Greek yogurt, chili sauce, lime juice and a pinch of salt. Set aside.
- Prep your grill for high heat.
- In a small bowl, combine the ½ teaspoon Kosher salt, garlic powder, paprika, parsley.
- Pat the fish dry and rub both sides of the fish with the spice mixture.
- Thoroughly coat the grill grates with nonstick cooking spray.
- Place the fish on the grill for 3-4 minutes on each side– depending on how thick the filets are, until the fish is cooked through and flakes off with a fork.
- We put a little olive oil in a nonstick skillet, on medium heat and “toasted” the tortillas (one at a time) until they were lightly browned on both sides.
- Assemble your tacos using the Greek yogurt mixture, fish and mango pineapple salsa.
