Cucumber Raita

2 cups plain greek yogurt

2 English cucumbers, peeled and diced or grated

3 TB lemon juice

1 tsp honey

¼ tsp salt

2 TB chopped cilantro

  1. Scoop seeds out of the cucumber with a small spoon. Dice cucumber with a knife or grate with a box cheese grater. Drain the liquid from the  cucumber in a metal strainer and sprinkle with a little salt (this helps release the liquid). You may want to use the back of a spoon to help squeeze out any excess liquid or place in a towel or cheese cloth and squeeze.
  2. Mix cucumbers with remaining ingredients.
  3. Chill for 3 hours to overnight
  4. Stir and serve

Some recipes add cumin, coriander, chopped green or red onion. Some even add red onion, carrots, or other vegetables and/or fruits.
